Ahhhh!! Craziness!!

Hey my loves!!

I haven't updated you all here much, but first I should post what I said on FB (just in case you don't want to read all of my rambling)

Hey everyone!! I REALLY apologize for my slacking on Facebook etc. We have been busy moving into our new house, planning our wedding, and going back and forth to my Midwife appointments and my high risk doctors appointments. Yes, I am pregnant!! ( I can't believe I never said anything about that on here, sorry I am a slacker!!) I am also kind of caught up in some family drama (not going to talk about this topic much....)

Let's start with the real post here!!


Slacking
I have been SUPER busy and I DO have to apologize. I'm so sorry!!

New House
Yes, John and I have gotten so happy in our relationship and have decided to invest into our own house, and leave all of the Josh memories at our old house.

Wedding
We have been so busy that we decided to have a wedding planner plan our wedding and since I will be pregnant, our wedding will not be "typical". Most weddings have brides in a dress etc. ( I think you know what I mean). Well, John and I have agreed that we don't want that. We want to be "dressy" (Me wearing a dress and he would wear some thing like maybe a polo but I don't know it's up to him) We don't want those fancy wedding dresses that cost LOTS of money (our opinion) because we want to save the money for our baby. 

Midwife Appointments
My Midwife appointments are going GREAT! I love her, she is SUPER nice and just an awesome person in general.

High Risk Doctor
I get this question a LOT and to be honest, it is fine, I love answering questions!! I have to see a high risk doctor as I have had 4 miscarriages, since the first time I got pregnant at 13.

Teen Pregnancy
I know, it was NOT a good choice to do that and I regret it a LOT. I always get this question. I really don't know why I decided it was good to get pregnant at 13.

Sick People/Lazy Saturday 2/9/13

Hey everyone!!
So...it has been a long day...lol not because it has been an awesome family type day!We sadly can't go outside due to we are all getting over a little mini cold and, it is 61 degrees here in Georgia. We have spent the day catching up on YouTube videos mainly, theschuermanshow & kyleandcourt (I will put both links at the end of this blog). As I am typing this the kids are going crazy! This blog might take me awhile to type as I am playing with the kids also. We have read a lot of book and even had a dance party. By the end of the day, I hope to have accomplished a bubble bath and a shower, that would be an awesome miracle!! I know I sure would enjoy that! Man, I haven't had a bubble bath since I was pregnant with Gracie (WOW! Its been awhile). Luckily, this weekend I was an on call doctor and so far I haven't gotten called in but, I know that one of my best friends did because she texted me and said "I have to go in and work..." I actually felt pretty bad for her but, on the other hand, I have had a lot of late night shifts lately. Some days, I don't get home until midnight (due to an emergency birth and I need to make sure the mama is in stable condition before I switch shifts with someone and, then I have to leave notes or reminders etc. on all of  my other patients). Needless to say, I haven't gotten much sleep (which makes for an unhappy mama). I can definitely tell that the kids are feeling better as they are going crazy and haven't even taken their N-A-P. I would like some peaceful time in the bath but, I guess that will have to wait, hmmmm.... if not during the day, maybe, tonight. Anyway, we will see about the bubble bath but, definitely a shower will be in order today. Honestly, I feel really bad when I punish Gracie, it's like a guilt feeling but, somehow I manage to control myself. Well, I better get back to the family as they want me to come join them playing.

Recipe: Ultimate Hot Chocolate

Ingredients

  • 4 cups milk
  • 1 cinnamon stick, 6 sprigs fresh mint, or 2 split vanilla bean (optional)
  • 10 ounces semisweet or milk chocolate, cut into small pieces
  • Whipped cream, for serving (optional)
  • Chocolate shavings (optional)

Directions

  1. Heat milk to scalding in a medium saucepan. Add cinnamon, mint, or vanilla, if desired. Let steep 10 minutes. Remove saucepan from heat; strain, and return to saucepan. Reheat milk; using a whisk, stir in chocolate until melted and milk is frothy. Serve immediately with a dollop of whipped cream garnished with chocolate shavings, if desired.

Recipe: {copycat} Chick-fil-a chicken nuggets

I am thinking of making this one night for dinner this week!!


Ingredients
2 skinless and boneless chicken breasts
1 cup milk
1 egg
1 1/4 cups flour
2 Tbsp. powdered sugar
2 tsp salt
1 tsp pepper
peanut oil (is best) or canola oil

How You Do It
In a medium bowl whisk the egg and stir in the milk. Trim any fat away from chicken. Cube chicken into bite size pieces. Place chicken in milk mixture and cover. Let it marinate for 2-4 hours in the fridge. This will make the chicken very nice and tender. In a gallon size resealable baggie combine flour, powdered sugar, salt and pepper. Seal and shake to combine. Place about 2 inches of oil in a medium deep pot. Over medium high heat (more towards the high side) heat oil until hot. If using a thermometer let the temperature reach 375°. If you don't have a thermometer,  test the oil by dropping a few drops of water into it. You want it to sizzle and not pop too much. Adjust your heat if necessary. Using a fork or tongs, remove cut chicken from milk mixture and place in the flour mixture. Seal and shake until nuggets are completely coated. Place about a 6-8 nuggets into hot oil and let them cook until golden brown, turning half way through once the edge of your chicken starts to turn white. About 1 minute each side. Always double check to see if any chicken you make is cooked through. Just make a tiny cut to see if it's pink. Remove and drain on a paper towel. Repeat until all nuggets are cooked. Serve with your favorite sauce.

1/2 cup mayonnaise
2 Tablespoons yellow mustard
1 Tablespoon Dijon mustard
3 Tablespoons Honey
1/2 Tablespoon lemon juice

Combine all ingredients and enjoy!

Recipe:Loaded Baked Potato & Chicken Casserole


Loaded Baked Potato & Chicken Casserole

Ingredients

·                     2 lbs chicken breasts, cubed or shredded
·                     10-12 small red potatoes diced
·                     1/2 cup olive oil
·                     1  tsp. salt
·                     1 TBS. freshly ground pepper
·                     1/2 TBS. garlic powder 
·                     2 c. Mexican Blend Cheese
·                     1/2 c. crumbled bacon 
·                     1/2 c. chopped green onion 
Directions

Preheat your oven to 475.  In a large bowl, mix together olive oil, salt, pepper, garlic powder.  Add the potatoes and coat with mixture.  Place the potatoes into a greased baking dish, leave as much of the mix as possible.  Bake potatoes for 1 hr, flip the potatoes every 15-20 mins. Check with a fork to ensure the potatoes are done.  While the potatoes are baking, coat the chicken with the left over mixture and cook in a skillet over medium heat, until the chicken is done (no longer pink inside!)  Once the potatoes are done, take them out of the oven and turn the oven temperature down to 400.  Add the chicken, cheese, bacon & green onions. Put the casserole back in the oven and bake for 5 minutes or until cheese is melted.  Serve with sour cream  or ranch dressing


OMG!! This is so yummy,I had this a few nights ago for dinner!! We all loved it!!

Pregnancy
I am NOT pregnant!! If I was, I would tell ya'll!!

TTC Plans
We are going to definitely be having at least one more child. Not sure how many,yet. We will probably NOT be getting pregnant anytime soon, as I am still dealing with my miscarriage and work has been super crazy.

Kaylee
Well, work has been really busy and a lot of babies have been born, lately. I have been thinking about quiting  
my job, because I really want to be a stay at home mom,some days, I still haven't found where my head is at, yet. I am thinking of helping Josh train people at the gym,but, I am not quite sure, yet.

Josh
He is doing fine,and having an awesome time training people at the gym.

Jackson
He is doing well in school!! He is a very awesome kid!

James
He is a very funny and mischievous 3 year old. He is wild at time but I love him so much!

Gracie
She is growing up by the day!She is getting really cute and funny!

Jenelle
She is currently pregnant again!! She is really excited and she says "I wasn't expecting baby #2 this soon but, I will certainly accept and welcome this child into my house/family."

Shane
He is working with Josh at the gym training people! So far, he is loving that job!

Baby Jackston
He is a wonderful joy to wake up to every morning!! We all love him to death!!

Recipe:Seven Layer Greek Dip

Seven Layer Greek Dip

I am a fool for Greek Salad. Like, I could eat it every day for all of eternity and be really very happy about it. When I make it, it is basically lettuce with kalamata olives, cucumbers, tomatoes, feta cheese, and artichoke hearts thrown on top. Drizzle a little Greek dressing on it, and I'm a happy camper.
The last time I made a Greek Salad, it occurred to me that it was weird that I hadn't figured out how to make a Greek Dip yet. Everything else around here gets made into a dip, so why not that?
Problem solved.
I looked to the internet for a little inspiration for this one and ended up making a variation of this. And by "variation" I mean I read it through once and never looked at it again, so it may not be at all the same as what I ended up with. It doesn't matter, though, because what I ended up with is OMG SO GOOD.
Like, really good.

I might have eaten just about the entire thing in one sitting. It's possible.
Seven Layer Greek Dip
1 8-oz package cream cheese, softened
1 teaspoon dried dill
1/2 teaspoon dried oregano (I would use twice as much and fresh if it were summer)
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 clove garlic, minced
1 tablespoon olive oil
1 1/2 cups hummus (I used this recipe--if using store bought, use an entire large container)
1/4 cup chopped kalamata olives
1 small cucumber, seeded and chopped
1 small tomato, seeded and chopped (I used a Roma tomato, but I don't think it matters. Use whatever doesn't cost an arm and a leg.)
1 can artichoke hearts, drained and chopped
1 cup feta
1. Place the cream cheese, dill, oregano, garlic, salt, pepper, and olive oil in a medium bowl and mix on low speed until well combined.
2. It's time to start layering. I used a 5-cup Pyrex dish, but you could use something shallower or bigger and still be just fine. Start with your cream cheese mixture. Smooth it out into the bottom of your bowl.
3. Sprinkle your kalamata olives on top of the cream cheese.
4. Hummus time. HUZZAH!
5. And now for some artichoke hearts.
6. Cucumbers. Of course.
7. Tomatoes, ahoy!
8. Feta cheese tops it all off and makes it perfect.
9. If you want, salt and pepper can be sprinkled on top. You can also drizzle a bit of Greek dressing, if that sort of thing makes you happy like it does me.
10. Serve with pita chips or whatever you want. It's really good on celery, for example.
